Jaggery is hygroscopic — it absorbs moisture from the air. This is completely natural, and it doesn’t mean your jaggery has gone bad. But if you store it poorly, it can become a sticky mess that’s hard to use, or it can actually spoil. Here’s how to store jaggery properly so it stays fresh for months.

Why Does Jaggery Get Sticky?

Jaggery is an unrefined sugar, which means it retains natural moisture, minerals, and molasses from the sugarcane. Unlike refined white sugar — which is stripped of everything and becomes bone-dry — jaggery still has living chemistry in it.

When jaggery is exposed to humid air, it pulls moisture in and becomes soft or sticky. In very humid environments like monsoon season in India, even well-sealed jaggery can soften within days. The stickiness itself isn’t dangerous, but if jaggery stays wet and warm for too long, it can ferment or develop mould.

The 5 Rules of Jaggery Storage

1. Airtight container, always

The single biggest mistake is leaving jaggery in the paper packaging it came in, or loosely wrapped in plastic. Paper breathes; plastic bags seal imperfectly. Use a glass jar or food-grade airtight container with a rubber-sealed lid. This is non-negotiable in humid climates.

2. Keep it away from heat

Jaggery stored near a stove, in direct sunlight, or in a warm pantry will soften and sweat even without humidity. Store it in a cool, shaded spot — ideally below 25°C. In summer, a refrigerator shelf (not the freezer) works well.

3. Don’t refrigerate without sealing first

Refrigerators circulate air that carries odours. Jaggery absorbs smells easily — it will pick up onion, garlic, or whatever else is in your fridge if you don’t seal it tightly first. Always double-seal in an airtight container before refrigerating.

4. Avoid direct contact with water

Never use a wet spoon or wet hands to scoop jaggery. Even a small amount of water introduced into the container speeds up clumping and shortens shelf life significantly. Always use a dry, clean spoon.

5. Store by form

Jaggery powder is more moisture-sensitive than blocks because it has greater surface area. It needs an extra-airtight seal and benefits most from refrigeration in humid months. Jaggery blocks and cubes are more stable and can sit in a cool pantry for months if sealed well.

How Long Does Jaggery Last?

  • Jaggery powder: 6–9 months sealed in a cool place; up to 12 months refrigerated
  • Jaggery blocks/cubes: 9–12 months at room temperature if sealed airtight

Jaggery with no additives has no preservatives, so proper storage matters more, not less.

The White Film: Should You Worry?

Sugar crystallisation: Completely harmless. As some of the sucrose migrates to the surface, it forms a fine white crust. Just scrape it off or dissolve the whole block in warm water.

Mould: Looks fuzzier, often has a green, black, or blue tinge, and has a musty smell. If you see this, discard the jaggery. The smell test is reliable: good jaggery smells earthy and caramel-like. Spoiled jaggery smells sour or fermented.

Can You Revive Sticky Jaggery?

Yes — sticky but not mouldy jaggery is still perfectly edible:

  1. Use it as-is. Sticky jaggery dissolves faster in warm drinks and cooking.
  2. Sun-dry it briefly. Spread on a tray and leave in direct sunlight for 2–3 hours. It will firm back up. Reseal immediately in an airtight container.

  2. Food-grade stainless steel dabbas — the traditional Indian choice; excellent if the lid seal is tight
